1. MDC T65 French Flour

2. High Gluten Flour

3. Sugar

4. Salt

5. French Yeast

6. Butter

7. Baker’s Kingdom Malt Extract

8. Water

9. Lallemand Levain


Step 01. After preparing the ingredients, place all in the mixing tank and stir till 9 gluten degrees. The final temperature of the dough is 24 degrees and the basic fermentation lasts for 60 minutes.

1. Cooked Boneless Chicken thigh & Chicken Breast

3. Minced Garlic

4. Chili Pepper

5. Thai Sauce

6. Coriander Segment 1cm

7. French Lemon Jam

8. Cooked White Sesame

9. Mozzarella Cheese

10. Oyster sauce

Step 02. After preparing the ingredients, mix all properly and set aside.

Step 03. After the basic fermentation, the dough is divided into 100g/piece, rolled them into a round shape and fermented for 30 minutes.

Step 04. After it gets fermented, gently pat the excess air in the dough and wrap it in 70g of the Thai lemon chicken filling followed by a final fermentation for 40-50 minutes.

Step 05. After the final fermentation, cut a cross in the upper and add 5g mozzarella cheese. Bake it in the oven at the temperature of 250 on the top / 210 on the bottom, spray steam for 3 seconds and bake it for about 13 minutes (baking time depends on the specific situation).

The color is lustrous and the acidity is moderate.

With the Imported lemon puree, it is not bitter. It’s in a sweet and slightly sour flavor in a tender and bright goose yellow color.


It can be used directly as a filling for the surface decoration. Custard cream, mousse and cream can also be added for dough.

T55 Flour

T55 is used for bread making with natural yeast fermented for a long time. The skin has tiger skin-like bubbles. It tastes like mocha. The color is obviously more yellow than ordinary French bread and the skin is thicker as well.
